For those of us who live in and around Bundoran and for regular visitors to the area, Piero Melis of the Courthouse Restaurant needs no introduction. After taking over the Courthouse Restaurant Kinlough in 1996 this elegant and underestated eaterie has become a firm local favourite. It was no surprise to us when Piero, winner of Best Chef in Leitrim for the past two year from Western Association in Ireland, was named by the Bridgestone Guide as Hottest Chef of the year and the Courthouse Restaurant as one of the best 100 restaurants in Ireland.

Piero is originally from Sardinia and his menu reflects that link with the Italian Island. All his ingredients are locally sourced and he has a particular love of seafood. Piero worked with Richard Corrigan at Bentley’s in London as manager of the oyster bar and it is with great pleasure that Lobsters & Lettuce will host his demonstration  of shelling and cooking with oysters.
